As with all solitaire games, the game play itself is infinite, and as you unlock each different stage and level in the game, you can replay all the different layouts as often as you like, but no two games will be exactly the same.  Waterscape Solitaire: American Falls also offers an interesting scoring system, by allowing the players to finish the game by matching designated gold cards.  Therefore, the object of the game is to uncover the gold cards and match them whilst leaving other cards still on the board.  For the tougher levels, special cards can be matched to enable shuffling of the remaining cards or undo moves.  There are also wild cards that can be paired with any other card.
